Cashew, White Chocolate & Butterscotch Chip Cookie Recipe

This recipe is a fun take on classic chocolate chip cookies.  

Cashews are the jewel of this cookie and are complemented with the smoothness of white chocolate and butterscotch for a more sophisticated flavor.

The hint of lemon extract gives the dough a brightness throughout you're sure to love!

2 1/2 cups of flour

1 tsp. baking soda

1 tsp. salt

2 sticks (1 cup) of butter softened (or butter-flavored shortening) 

3/4 cup white sugar

3/4 cup brown sugar

1/2 tsp vanilla extract

1/2 tsp lemon extract

2 eggs

1/2 cup coarsely chopped Merchant's Reserve Cashews

3/4 cup of white chocolate chips

3/4 cup of butterscotch chips


Preheat oven to 350 degrees.  

Mix flour, salt & baking soda in a bowl and set aside. 

Cream together butter (or butter-flavored shortening depending on choice) and sugars, then add the eggs one at a time, and vanilla and lemon extracts. 

Gradually add flour mixture and mix together until combined & add the white chocolate chips, butterscotch chips, and cashews.

Use a tablespoon to form balls of dough and place on ungreased cookie sheet. 

Bake for 15 minutes, or until slightly golden brown. 

Cool on wire racks before eating.
